腐皮素什锦卷

腐皮素什锦卷
●炸菜
●制作时间8分钟

主料

◆芹菜25克
◆胡萝卜25克
◆冬笋50克
◆水发香菇50克
◆口蘑50克
◆油皮2张
◆蛋清2个

调料

◎盐、酱油、胡椒粉、白糖、香油、鸡精各1/2小匙
◎淀粉1小匙
◎葱、姜丝、高汤、食用油各5克

家常菜的做法

①将胡萝卜、冬笋去皮切丝,口蘑切丝;坐锅点火放入油,油温4成热时放入葱姜丝略炒倒入上述五丝,盐、鸡精、胡椒粉酱油略炒至熟,倒入碗中晾凉待用。

②将腐皮用垫毛布捂至回软,切成长方状,抹上蛋清淀粉,放上制好的五种丝,卷成卷状不要露馅,用竹签扎些小孔,下锅煎成金黄色捞出沥干。

③锅中加入高汤,放入什锦卷、盐、酱油、白糖、鸡精烧沸,然后将汤汁收干,淋香油起锅晾凉后,切菱形块即可。

◆celery 25 g
◆carrot 25 g
◆bamboo shoots 50 g
◆shiitake mushroom, soaked 50 g

◆beancurd skin 2 sheets

Seasonings

◎salt, soy sauce, ground pepper, sugar, sesame oil, chicken powder 1/2 tsp
◎cornstarch 1 tsp
◎scallion, shredded ginger, well-stewed soup and vegetable oil 5 g each

①Peel and shred celery, carrot, bamboo shoots and mushrooms. Pour oil into wok over high heat. When oil nearly ripples, add shredded ginger and scallion, stir for seconds and pour the five shredded stuffs mentioned above. Add salt, chicken powder, ground pepper and soy sauce. Stir often until cooked, pour into a bowl and let it cool down.

②Bury beancurd sheets in a towel until softened, cut into long shapes, spread with egg white and cornstarch. Stuff the above five cooked slices in and roll the sheets up. Stab some slight punctures with toothpick. Deep-fry in a pan until browned, remove and drain.

③Prepare half pot of well-stewed soup with the above vegetable rolls and seasonings, bring them to boil, continue cooking until thickened. Prepare some sesame oil and pour over vegetable rools. Cool down and cut into diamond cubes.

①Rinse and trim eggplant and then cut into sections. Put into boiling water until cooked. Remove and drain, set into dish. Rinse scallions and cut into shreds. Peel garlic and finely chop, set aside.

②Mix minced pork with sugar, soy sauce and ketchup, stir until well-combined.

③Heat up a skillet with oil, adding pork, stir often until tender and loose. Add Seasonings and boil until fragrant and then thicken with starchy solution. Pour on eggplant.

②Pour oil into frying pan or wok over high heat. When oil ripples, add pumpkin. Stir often for seconds, dish off and drip water. With some oil remaining in wok, add in garlic, black bean juice until fragrant. Return pumpkin chunks to pan and add soup stock, mushrooms. Add salt, chicken powder and ground pepper to taste. Stir over high heat for 5 minutes and add in chive segments. Pour into clay pot and braise for another 5 minutes and dish off.

◆Chinese mushrooms 30 g

Seasonings

◎salt 1/2 tsp
◎sugar 1/2 tsp
◎oyster sauce 1/2 tsp
◎bean paste 1 tsp
◎cornstarch 1 tsp
◎fresh ginger 5 g
◎vegetable oil 30 g

Chinese food DIY Directions:

①Peel the white gourd and cut it into thick sticks, cut the ginger into shreds, cut the streaky pork into slices; Wash and soak the Chinese mushrooms for 1/2 hour.
②Put the water in the pot and bring to the boil, put the white gourd sticks into the boiling water for half minute, take them out and put into cold water.
③Heat the oil and stir-fry the pork slices for half minute, lower the flame, add the shredded ginger, mushrooms, bean paste and keep stir-frying for 1 minute.
④Add some water and bring to boiling point for 5 minutes, put in the other seasonings and the mixture of cornstarch and water to thicken the sauce. Take out and serve.
